For starters the city of Mumbai has been home to several of India's several new beginnings from the Bombay Plan during the pre-independence period intended to develop the economic strength of the country of India. Now home to several companies, small in size and companies in a multinational scale, and the Bollywood industry. The city of Mumbai has become quite the hotbed of economic activity in the country.
There are several things that are iconic to the city, the beaches of Juhu, the grand trunk road and among its street food the bhel puri.

Believed to have originated from Gujarati residing in the city, it is a rendition of the original chaat of north Indian fame and was created by Gujaratis in an effort to replicate it resulting in a whole new snack itself. The story goes like, the housewives of Gujaratis experimented on the chaat by adding several new ingredients to form new flavours. The addition of new varieties in the chat eventually gave birth to bhel puri. The other story believed is that it was concocted by a restaurant near Victoria terminus called Vithal
Whatever its origin be, it is without doubt however when it comes to the street snacks of India and Mumbai the bhel puri is the most iconic of it all. Basically it is made out of sev puffed rice, which is then mixed along with potatoes, onion, and topped with chutney and sprinkled chat masala, fried snacks are often added into the mix which provides it a crispy and crunchy bite while consuming it.

The rise of modern entrepreneurs has long led the Indian local food industry to suffer, with many not in the position to combat the distribution and capital power that large companies have, for example the ice cream industry has long been taken over by companies and their franchises leaving the local ice cream vendors forced to abandon their own and instead sell the company produced ice creams as they can no longer challenge it. However in the case of the bhelpuri, the local vendors of Mumbai like the ones found in Juhu and chowpatty find customers thronging in large numbers from all over, coming to taste the local snack making it one of the few snacks still made. These are sold by local vendors preserving the cultural and historical importance that ties it to the city and for many a staple of their childhood, cheap and filled with flavors of all kind the dish defines the Mumbai palette quite well making it one of the most iconic dishes to come out from the city of Mumbai
